Hmm, I see lots of good stuff is already on the lists so I'll gust mention a couple of Genesis titles by Treasure; they're all a)fun to play b)pretty c) games by people who created Gunstar Heroes (if you haven't played it yet -- shame on you):

Dynamite Headdy, Alien Soldier and Rocket Knight Adventures (done while still part of Konami).

But I'd like to warn you beforehand -- Alien Soldier is teeth-grindingly hard, battletoads-hardcore even.

Dragon Warrior IV - Second only to Dragon Quest V in my opinion.

Faxanadu - Similar to Zelda 2.

Gun*Nac - Another COMPILE SHMUP.

Maniac Mansion - Or track down the uncensored PC versions. Adventure game.

Moon Crystal - One of the NES's last great platformers. Translation patch at RHDN.

Nightshade - Unique Action/Adventure hybrid, with cool atmosphere.

Otaku no Seiza - You won't get far in this RPG without knowing Japanese, but leave town and you will be attacked by a monkey with a revolver. Or two.

Pirates! - Sid Meier's classic simulation.

Terranigma - The last one was suggested before, but the other two are its thematic predecessors. I didn't like Illusion of Gaia much though.

Legend of the Mystical Ninja - Goemon. 'Nuff said.

Nosferatu - Difficult Prince of Persia-style horror platformer.

Super Ghouls 'n Ghosts - Quite possibly the hardest video game ever made.

Taekwondo - My favorite Super NES fighting game, bar none.

Umihara Kawase - Grappling-hook based platformer.

Scooby Doo - Three mini-Adventure games based on Scooby Doo!

Super Hydlide - If memory serves, this is Hydlide 3, which is far far better than the original game..

Are there any Sega Saturn emulators that actually work? Last time I checked (which wasn't for a bit, but still) there weren't any that were actually playable.

SSF that can Radiant Silvergun & Castlevania symphony of the night, thats the only ones that i have tested thought. You need to have a good computer in order to use it, as its far from perfect (althought its getting there)

It wasn't like a regular Final Fantasy game, and it's seperate from those Final Fantasy Legend ones that were mentioned before, and I believe much lesser-known. Sword of Mana on GBA basically ripped off the storyline and threw in some better graphics, but I like the FFA gameplay better.

I have to second (or third or fourth) whoever said guardian legend, there is nothing I don't like about it.

I'd have to recommend Zombies Ate my Neighbors for SNES (the genesis version is severly crippled), especially if you like Robotron, Smash TV and/or Gauntlet type games.

I figured there had to be some kind of backstory like that, but I wasn't entirely sure what it was, so I didn't want to speak in ignorance and sound like an ass ^_^

Thanks for clearing that up though.

I'm replying straight to the opening post so consider any repeats others have given to be just another vote for that game.

NES:
To The Earth: Holds a special place to me as the first game I ever had, loved, and then got frustrated with enough to never play anymore. VERY tough at later levels.
Crystalis: Easy, quick, but a lot of fun.
Blaster Master: But you probably finished that a few times also.
Star Tropics:  Either an old classic or you're too young to have heard of it. In both cases, good reason to play.
Cobra Triangle: Made of Racing, Shmupping, Awesome, and boats.
Maze of Galious: Actually mentioned on this site, but just in case it was overlooked.
Solar Jetman: Its a particular style one has to like though...
Star Soldier: NES had an ok version of it. Fun, rather catchy music. Probably my favorite game to use the power glove with, actually.

Destination Earthstar: Think Thunder Force 2, but first-person instead of top-down in the 'explore area' half of the game. The cockpit half was so-so, the sidescrolling base attacks were pretty sweet (back/front weapon setup gave different effects, so hit start and try it out).

Cybernoid... if you're a masochist. Fun though.
Astyanax you've probably gone through..
Gi-Joe atlantis factor. Laugh all you want, but I thought it was a very fun, and relatively long, action/platformer.
Dinowarz: horrible... but fun.

SNES:
Mostly shmups here... the other stuff's well known and popular on average...
Gradius III: E.Laser, R.Option, Reduce shield... what more can you want?
SWIV (aka Firepower 2000): Dunno why anyone would play the heli though.
Thunder Spirits (TF3 remake, better in some ways but suffers from slowdown)
Super Earth Defense Force: no-miss stages are well rewarded...
Axelay: Classic.
Super Aleste: Fun.
Spriggan Powered: lots of fun. Kinda pretty.

Kirby's Dream Course (you'll stop snickering when you realise  you've been at it for 3 hours)

R-Type III ()

Langrisser: The SNES version looks a lot better (also available to genesis) but for some reason emulation goes to a crawl with some combat animations. NO idea why... Managed to get it to be a little faster on snes9x... barely.

Front Mission: Many friends of mine loved 3/4 yet somehow the fact that there was a first one on the SNES eludes them still...

Game Gear/Genesis: All things Shining Force.
Game Gear: Choplifter 3, Sonic 2

Genesis:
Gaiares (most wonderful)
Columns 3: Revenge of Columns. (As a side note, "Revenge of Columns" is probably the best added bit to a title ever written. Try it with other names! It works!)
Rocket Knight Adventures (awesome)
Castlevania: Bloodlines
Thunder Force III
Thunder Force IV
Gunstar heroes but that's rather obvious/well known.

Sega CD:
Snatcher


As for the Saturn emulation question, They all work, halfassedly and up to a point. You can play several games more or less perfectly on each... its more a matter of tuning it to the individual computer that's torture. Though can't get Leynos 2 working myself. Panzer Dragoon Saga is reason enough to go through that hell, however.

If you did get Saturn an obvious choice would be SRWF and F Final, through from what I heard, the difficulty of the games is probably 10 times more hell than getting the emulator to work for them.

There's a Pd port of SRWF/FFInal. Which DOESN'T have the save-eating bug.

(I assume. Shinji was whining, there was a slap noise, them Amuro was yelling at him. But it was all in voodoo.)
